Norway, Unscripted: Two Weeks Through Fjords, Glaciers & Hidden Corners
There are trips that impress you… and then there are trips that stay with you.
Norway was the latter.
From the very beginning, what stood out most wasn’t just the landscapes (although those are wildly beautiful), but the people and the food. Every single day felt like a new discovery—fresh seafood pulled straight from the source, meals prepared with intention, and moments shared with local families who welcomed us into their homes like old friends.
Because of the relationships behind this journey, we weren’t just passing through Norway… We were experiencing it from the inside. The feeling of the entire journey can be summed up in one word: amazement. A seamless blend of adventure and those slower, indulgent moments where you can truly exhale.
And yes… even when Norway had other plans (looking at you, weather), it somehow worked out even better than expected. When our fjord arrival had to pivot from helicopter to car, the team quietly rearranged everything behind the scenes—and surprised us later with a helicopter experience in the Arctic instead. That alone tells you everything about the level of care behind a trip like this.
Oslo: A Soft Introduction to Norway
Oslo is not a city you need a ton of time in—but it’s the perfect place to begin.
It eases you in.
There’s a calmness to Oslo that feels very aligned with the rest of the country. It’s polished but not overwhelming, cultural without trying too hard. A few days here is just enough to get your bearings before heading into the more remote parts of Norway.
One of my favorite moments? A floating sauna cruise.
If you want to be thrown straight into Norwegian culture, this is it. Picture a wood-fired sauna drifting through icy waters… followed by the expectation that you will jump in. It took multiple attempts (and a lot of internal pep talks) before I finally committed, but once you do—it’s oddly exhilarating.
I also loved spending time in the National Museum. It’s an eclectic mix of Norwegian creativity—art, design, and culture all woven together in a way that feels both thoughtful and approachable.
Oslo sets the tone. But the real magic begins once you leave it behind.
The Fjords: Where Norway Slows Down
If Norway had a heartbeat, I’m convinced it would be found here.
Our time in the fjords was based at a private, exclusive-use property tucked into nature—Our Hideaway—and it truly lives up to its name. This is the kind of place where everything feels intentional. You’re not just staying here… you’re living here, if only for a few days.
And because it’s a full buyout property, everything is curated entirely around your group. Whether it’s two couples or a multi-generational family, the experience feels incredibly personal.
One of the most memorable days started on the water.
We boarded a small boat with a father-son duo who guided us through the fjords, sharing stories of the region as we moved through still, glassy waters. At one point, we passed a factory and casually asked what it was—turns out, it was the Helle knife factory. Naturally, we were intrigued… and within hours, they had arranged a private visit for us to go behind the scenes and shop.
That’s Norway. Effortless, thoughtful, and quietly exceptional.
Lunch that day was at the captain’s home, where his wife had prepared an incredible seafood spread… fresh crab, local ingredients, and views over the fjords that felt almost surreal. We toured their home, met their sheep, and spent time simply enjoying the moment. It didn’t feel like an excursion. It felt like being welcomed in.
Back at the Hideaway, we were completely spoiled by Chef Adam Bjerck, who joined us on property and prepared every meal. Each one felt intentional and deeply connected to the region.
One afternoon, we set out on a hike directly from the property. Winding through forest trails that felt straight out of a storybook (yes, we were absolutely on troll watch), we climbed to a lookout point that opened up to sweeping views of the entire fjord landscape. This was the part of the trip where time slowed down. Where conversations lasted longer. Where everything felt just a little more meaningful.
And while I thought this would be the highlight of the journey… Norway wasn’t finished yet.
Bergen: Norway’s Most Charming City
After a weather-forced pivot (which included a very scenic drive and ferry), we arrived in Bergen—and I’ll be honest, I was more impressed than I expected to be.
If Oslo is understated, Bergen has personality.
Quaint houses climb up the hills, historic streets wind through the city, and the UNESCO-listed Bryggen area adds this layer of history that makes the entire place feel alive. It’s charming, vibrant, and just the right size.
One of my favorite experiences here was heading out by boat to learn the art of crabbing from a local.
We didn’t just watch… we did it. And somehow managed to catch more than enough for an incredible lunch. Sitting down afterward, enjoying what we had just caught, and listening to stories about life in Norway (including time spent working on offshore oil rigs) added so much depth to the experience.
The standout meal in Bergen?
A private dinner in the home of Michelin-starred chef Christopher Haatuft.
I’ve dined in some of the best restaurants in the world, but this was something entirely different. It was intimate, relaxed, and so personal. Watching him cook, hearing his stories, and sharing that space made it one of the most memorable dining experiences I’ve ever had.

The Arctic: Where the Real Magic Happens
And then… the Arctic.
Without question, this was my favorite part of the trip.
There’s something about being that far north that shifts your perspective. It’s quieter. Slower. More intentional. You feel completely removed from the noise of everyday life—and fully immersed in nature.
We spent four nights here, staying in glass igloos that made you feel like you were part of the landscape. Cozy, warm, and surprisingly luxurious, they added such a unique layer to the experience.
And then there were the Northern Lights.
We were lucky enough to see them multiple nights—dancing across the sky while we gathered around a fire, and even one evening from the hot tub. It’s one of those moments that’s hard to put into words, but you feel it.
During the day, it was nonstop adventure: dog sledding, glacier safaris, Arctic floating (yes, floating in icy water in a thermal suit), kayaking, skiing, boat cruises, sauna and cold plunges. Even with four nights, we didn’t get to everything.
The energy here is different. The community is small but incredibly welcoming. We got to know our guides, their families, and the people who make this place what it is.
Meals were another highlight, thanks to Chef Stian, whose cooking was simple in concept but full of flavor. Nothing overly complicated—just incredibly well done, warm, and comforting after long days outside.
We ended our time here with a celebration—bringing together everyone we had met along the way. Hours of food, drinks, laughter… and at one point, someone casually brought out a lamb shank and a knife, which I’ve learned is apparently how you know it’s a proper Arctic party.
I left with new friendships, unforgettable memories, and a strong feeling that I’ll be back.
